Easy Autumn Apple Cake

A quick and easy cake. Always popular when we serve it in the cafe
Ingredients
- 210gms plain flour
- 2tsp Baking Powder
- 1/2 tsp bicarbonate of soda
- 150gms caster sugar
- 3 medium sized eating apples
- 2 large eggs
- 1 tsp vanilla extract
- 120ml vegetable oil
- 120ml greek yoghurt
For the topping:
- 50gms caster sugar
- 1 tsp of cinnamon
- 1 tblsp melted/soft butter
Finishing glaze:
- 30gms icing sugar
- 1 tblsp hot water
Method
- Pre heat oven 180 (fan oven)
- Grease and line 8″ cake tin
- Add all dry ingredients for the cake in a large mixing bowl
- Finely chop the apples and stir into the dry ingredients
- In a separate bowl add the eggs,oil, greek yoghurt & vanilla extract and whisk
- Add this mix to the dry ingredients gently mix together , careful not to over mix .
- Place in the cake tin
- Stir the butter, sugar and cinnamon together in a bowl – the mix should feel ‘grainy’
- Take small pieces and dot over the top of the cake
- Place in oven and bake for 30-35minutes.
- Cool on a wire rack
- When cool make the icing glaze by mixing the hot water with the icing sugar and drizzle over the cooled cake.
